Avocado Toast with Poached Egg

This delightful avocado toast features creamy avocado layered over crisp bread, topped with a perfectly poached egg. It’s a deliciously satisfying meal that balances textures and flavors beautifully.

Ingredients

  • 2 piece whole grain bread
  • 1 whole ripe avocado
  • 2 whole eggs
  • 1 tbsp lemon juice, for avocado
  • 1 pinch salt, to taste
  • 1 pinch black pepper, to taste
  • 1 tsp olive oil, for drizzling
  • 1 tbsp fresh herbs (like cilantro or parsley), optional garnish
  • 1 tsp red pepper flakes, optional garnish

Directions

  1. Begin by toasting the whole grain bread slices until they are golden and crisp.

  2. While the bread is toasting, cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl.

  3. Add lemon juice, salt, and pepper to the avocado, then mash it with a fork until smooth but still a bit chunky.

  4. Bring a small pot of water to a gentle simmer. Crack each egg into a small bowl before sliding it into the water carefully, cooking for about 3-4 minutes for runny yolks.

  5. Use a slotted spoon to carefully remove the poached eggs from the water and let them drain on paper towels.

  6. Spread the mashed avocado generously over the toasted bread slices, then place a poached egg on top of each.

  7. Drizzle with olive oil, and sprinkle with fresh herbs, red pepper flakes, salt, and pepper to taste.

  8. Serve the avocado toast warm, letting the egg yolk flow into the avocado for added creaminess.
