Buffalo Cauliflower Bites

Ingredients
- 1 head cauliflower
- 0.5 cup all-purpose flour, can substitute with gluten-free flour
- 0.5 cup cornstarch
- 1 tsp garlic powder
- 1 tsp onion powder
- 0.5 tsp paprika
- 0.5 tsp salt
- 0.5 cup water, adjust for consistency as needed
- 0.5 cup buffalo sauce, adjust to taste
- 2 tbsp olive oil
- 0.25 cup blue cheese or ranch dressing, for dipping
- 2 tbsp fresh parsley, chopped, for garnish
Directions
Preheat the oven to 450°F (230°C). Cut the cauliflower into bite-sized florets and set aside.
In a mixing bowl, combine the flour, cornstarch, garlic powder, onion powder, paprika, salt, and water until smooth.
Dip each cauliflower floret into the batter, ensuring it is well-coated, and place on a baking sheet lined with parchment paper.
Drizzle the coated cauliflower with olive oil and bake for about 20 minutes, or until golden brown and crispy.
Remove the florets from the oven and toss them in the buffalo sauce until completely coated.
Return the sauced cauliflower to the baking sheet and bake for another 5-10 minutes to set the sauce.
Remove from the oven and garnish with chopped parsley. Serve hot with blue cheese or ranch dressing on the side for dipping.
