Classic French Crêpes
Delicate and thin, these classic French crêpes combine a light texture with buttery flavor, perfect for both sweet and savory fillings.
Ingredients
- 1 cup all-purpose flour
- 2 whole eggs
- 1 cup milk, whole or 2% recommended
- 2 tbsp butter, melted, plus more for cooking
- salt, a pinch
- 1 tbsp sugar, optional, for sweet crêpes
Directions
In a mixing bowl, whisk together the flour, eggs, and salt until smooth. Gradually add the milk and melted butter, mixing until fully combined.
Cover the bowl and let the batter rest for at least 30 minutes at room temperature.
In a non-stick skillet, melt a small amount of butter over medium heat. Ensure the surface is coated without excess grease.
Using a ladle, pour about 1/4 cup of batter into the skillet. Quickly tilt and swirl the pan to form a thin, even layer.
Cook for about 1-2 minutes until the edges begin to lift and the bottom is lightly golden. Gently flip and cook for an additional minute on the other side.
Remove the cooked crêpe and set aside on a plate. Continue with the remaining batter, adding butter to the pan as needed.
Crêpes can be enjoyed immediately or filled with your choice of sweet or savory ingredients.
