Creamy Tuscan Garlic Chicken
Indulge in succulent chicken breasts bathed in a rich, creamy sauce filled with sun-dried tomatoes and fresh spinach. This dish is a delightful twist on classic Italian flavors, perfect for any dinner occasion.
Ingredients
- 4 piece chicken breasts, boneless and skinless
- 2 tbsp olive oil, for frying
- 1 tsp salt
- 1 tsp pepper
- 3 clove garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup fresh spinach, packed
- 0.5 cup sun-dried tomatoes, chopped
- 0.5 cup parmesan cheese, grated
- 1 tsp Italian seasoning
Directions
Season the chicken breasts with salt and pepper on both sides.
In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer.
Stir in the fresh spinach and chopped sun-dried tomatoes. Cook until the spinach is wilted and the sauce is slightly thickened, about 3-5 minutes.
Stir in the grated parmesan cheese and Italian seasoning. Mix until the cheese is melted and the sauce is creamy.
Return the cooked chicken breasts to the skillet, spooning the sauce over them. Allow to simmer together for another 2-3 minutes, then remove from heat.
Plate the creamy chicken, garnishing with additional parmesan if desired. Enjoy while hot with your choice of sides!
