Ingredients

  • 1 whole chicken (about 4-5 pounds), Organic, if possible.
  • 2 tbsp olive oil, For skin crisping.
  • 1 tbsp salt, Kosher salt preferred.
  • 1 tsp black pepper, Freshly ground.
  • 1 lemon (cut into quarters), Adds brightness.
  • 4 clove garlic, Smashed.
  • (such as rosemary or thyme), A handful for flavor.
  • Additional salt and pepper to taste.

Directions

  1. Preheat the oven to 450°F (230°C) and prepare a roasting pan.

  2. Pat the chicken dry inside and out with paper towels for maximum crispiness.

  3. Rub the chicken all over with olive oil, salt, and pepper, ensuring even coverage.

  4. Stuff the cavity with lemon quarters, garlic, and fresh herbs for added flavor.

  5. Place the chicken breast-side up in the roasting pan and roast for about 1 hour, or until the skin is golden and an internal thermometer reads 165°F (74°C).

  6. Remove the chicken from the oven and let it rest for about 15 minutes before carving.

  7. Carve the chicken and serve with your favorite sides and sauces.
