Roasted Red Pepper Hummus
This vibrant roasted red pepper hummus is a creamy, flavor-packed dip that brightens any snack table. Its combination of smoky, sweet peppers and garlic creates a delightful contrast with the smooth texture of chickpeas.
Ingredients
- 1 cup cooked chickpeas, canned or homemade
- 1 cup roasted red peppers, drained if using jarred
- 2 tbsp tahini
- 2 tbsp lemon juice, freshly squeezed if possible
- 1 clove garlic, minced
- 2 tbsp olive oil, plus extra for serving
- 0.5 tsp ground cumin, optional for added warmth
- 0.25 tsp salt, to taste
- water, to adjust consistency
Directions
In a food processor, combine the chickpeas, roasted red peppers, tahini, lemon juice, garlic, olive oil, cumin, and salt. Process until the mixture is smooth, scraping down the sides as needed.
If the hummus is too thick, add water, one tablespoon at a time, until desired consistency is reached. Blend again to incorporate any added water.
Taste the hummus and adjust seasoning as necessary, adding more salt or lemon juice if desired. Blend briefly to mix any adjustments.
Transfer the hummus to a serving bowl. Drizzle with olive oil and garnish with paprika if desired before serving.
Pair with pita bread, fresh veggies, or crackers for dipping. This hummus can also be used as a spread for sandwiches or wraps.
