Roasted Tomato and Burrata Crostini

Savor the delightful contrast of crispy crostini topped with juicy roasted tomatoes and luscious burrata. A perfect blend of flavors that delight the palate, making it an ideal appetizer for any gathering.

Ingredients

  • 1 loaf baguette, sliced into 1/2 inch pieces
  • 2 cup cherry tomatoes, halved
  • 1 tbsp olive oil, for roasting
  • 1 tsp salt, to season
  • 0.5 tsp black pepper, to season
  • 1 cup burrata cheese, cut into small pieces
  • 1 tbsp fresh basil, chopped, for garnish
  • 1 clove garlic, halved for rubbing on bread
  • Balsamic glaze, for drizzling, optional

Directions

  1. Preheat your oven to 400°F (200°C). Slice the baguette and halve the cherry tomatoes.

  2. In a bowl, toss halved cherry tomatoes with olive oil, salt, and pepper. Spread them on a baking sheet. Roast in the oven for about 15-20 minutes, until they are soft and slightly caramelized.

  3. While the tomatoes roast, arrange baguette slices on another baking sheet. Brush them lightly with olive oil. Toast in the oven for 5-7 minutes until golden and crisp.

  4. Once toasted, take the garlic clove and rub it on one side of each crostini for flavor.

  5. Top each crostini with a generous spoonful of roasted tomatoes and a piece of burrata cheese.

  6. Sprinkle with chopped basil and drizzle with balsamic glaze, if using. Serve immediately and enjoy the delightful contrast of flavors and textures!
